The date palm is the treasure of the Saharan regions. Not only for its fruit, of which there are thousands of varieties, but also for its ecosystem services and the various uses of its by-products for the benefit of oasis dwellers and their livestock. Date pits are one of the by-products of date palms. They are discarded or partially incorporated into animal feed or used in the treatment of diabetes, as an anesthetic, in cosmetics, etc., resulting in a significant economic loss. Rich in antioxidants and other active substances with high added value, they deserve to be exploited.This book aims to take a look at the phytochemical composition of the lipid profile in terms of fatty acids, sterols, and tocopherols in date kernel oil.
