Fishing is one of the main economic activities in the Pantanal and adding value is an important source of income for fishermen, as it increases the unit value of the raw material through handling, generating better quality, attractiveness, convenience and presentation. What is certain is that the process of adding value consists of many stages and phases, which need to be analysed and understood by everyone involved in fish processing. One way of improving the trade and, consequently, the use of piranha is through its processing, which can make it possible to expand the catalogue of products on offer and thus add value.
