Mason (14) signale une décoloration rose du fromage, du type Wensleydale, causée par une levure. Cette décoloration s'est développée très rapidement sur les surfaces nouvellement coupées, mais elle n'a pas été constatée dans le fromage Cheddar, sans doute à cause de la texture.
