Salmonella is considered to be one of the most prevalent microorganisms in foodborne outbreaks and is a major health problem in industrialised and developing countries. In recent years, Salmonella serotypes isolated from food have shown an increase in antimicrobial resistance, particularly those of animal origin. In addition, a higher incidence of human salmonellosis has been reported due to multi-drug resistant strains. The book presents a theoretical and experimental approach to the molecular epidemiology of Salmonella spp. isolated from food and humans in different cities in Brazil. About the author










The author has a degree in Food Engineering, a master's degree in Food Science and is currently a PhD student at the Northeast Biotechnology Network (RENORBIO). She has experience in Food Microbiology and works mainly with: Salmonella, pathogenic microorganisms, PFGE, public health and technological innovation.
