About the author
José Juan Buenrostro-Figueroa, PhD, is a Researcher at the Research Center for Food and
Development, A.C., Mexico. His experience is in bioprocess development, including microbial
processes for enzyme production and recovery of bioactive compounds, valorization of agro-industrial
byproducts, and extraction and characterization of bioactive compounds from plants and agroindustrial
wastes. He has published papers in journals, book chapters, several books as editor, and
more than 70 papers at scientific meetings.
Mónica L. Chávez-González, PhD, is a Research Professor of Chemical Sciences at the Universidad
Autónoma de Coahuila, Mexico, as well as the general coordinator and founder of the Bioprocessing
Mx-LATAM Network, which promotes R&D in bioprocessing through interaction between universities,
institutes, research centers, and industries in Mexico and Latin America. She was awarded the Latin
American Women in Chemistry Award as an "Emerging Leader," granted by the American Chemical
Society and the Latin American Federation of Chemical Associations.
Theresa Obiajulu Egbuchunam, PhD, is a Professor of Materials Chemistry at the Federal University
of Petroleum Resources, Nigeria. Her interests include metal soaps from vegetable oils and
applications, cellulosic polymers and their applications, epoxidized vegetable oils for poly (vinyl
chloride) formulations, nanoparticles, and environmental studies. Dr. Egbuchunam served as Director
of the SERVICOM Unit and Director, Federal University of Petroleum Resources Unit. She is presently
on sabbatical appointment in the Department of Pure and Industrial Chemistry, University of Port
Harcourt, Nigeria.
Leonardo Sepúlveda Torre, PhD, is a Professor of Chemistry at the Universidad Autónoma de
Coahuila, Coahuila, México, where he leads the Bioprocesses and Microbial Biochemistry Group.
He formerly worked as a collaborator at the Center of Biological Engineering in Uminho, Braga,
Portugal, with the link project "Biotechnologies for Regional Food Biodiversity in Latin America."
He is an author and co-author of scientific articles, several books, and book chapters, and he holds
two national patents.
A. K. Haghi, PhD, is a retired professor and has published more than 1000 publications, including
books, book chapters, and papers in refereed journals. He is currently a research associate at the
University of Coimbra, Portugal. Professor Haghi has received several grants, consulted for several
major corporations, and is a frequent speaker to national and international audiences. He is Founder
and former Editor-in-Chief of the
International Journal of Chemoinformatics and Chemical Engineeringand
Polymers Research Journal. He served as a member of the Canadian Research and Development
Center of Sciences & Cultures.
