About the author

José M. Alvarez-Suarez is a full professor at the Universidad San Francisco de Quito, Quito, Ecuador. He has extensively studied the quality parameters of honey, especially of monofloral origin, as well as the relationship between its chemical composition and biological properties. A distinctive feature of his research is the study of the biochemical mechanisms by which honey activates antioxidant defense mechanisms at the cellular level by activating the AMPK/Nrf2/ARE signaling pathway, protecting mitochondrial functionality, and promoting cell proliferation. Additionally, his research explores the mechanisms by which honey and its components exert their antimicrobial action.
