Fred Sirieix moved to the UK in the summer of 1992. He worked in senior front-of-house positions in landmark London restaurants, including Le Gavroche, Sartoria, Brasserie Roux and Galvin at Windows at the London Hilton, where he worked as general manager until 2019.
