Ziel dieses Buches war es, den Gehalt an phenolischen Verbindungen (NTF) in den Früchten von 26 Juçara-Genotypen zu extrahieren und zu quantifizieren, die in Fragmenten des Atlantischen Waldes in den Regionen Süd und Caparaó von Espírito Santo gesammelt wurden. Außerdem sollte die antioxidative Aktivität der in den Juçara-Früchten vorhandenen Anthocyane im Vergleich zu einem synthetischen Antioxidans (BHT) anhand von DPPH- und H202-Sequestrationstests sowie forcierter Lipidoxidation bewertet werden.
