Avignonesi is an estate in eastern Tuscany, in the municipality of Montepulciano, whose name is reflected in the names of the wines that give it its good reputation: Wine Nobile di Montepulciano (DOCG) and Rosso di Montepulciano (DOC). The vineyards are farmed organically and biodynamically. The main grape variety planted on the estate is Sangiovese, which is used to make the two wines mentioned above. Every year, the estate strives to improve its vineyard and cellar practices, with the aim of producing high-quality wines from ripe, healthy grapes. To achieve this objective, a number of experiments are carried out, including a comparison of four vinification methods (control, addition of tannins, addition of stalks and with bentonite on the bleeding) to combat laccase on the Sangiovese. Analyses and tastings were carried out to illustrate the experiment.

A Bordeaux winemaker born in Bilbao, Begoña studied biochemistry at university in France. Passionate about wine, she obtained her National Diploma in Oenology. Begoña has worked in a number of well-known wineries in France and Italy. She currently works as an oenologist at the Albariño winery in Galicia.
