Whilst recognising the unprecedented nature of the research, we believe it to be an important record, which is why it is valid and useful for future researchers in the field and those curious about local gastronomy. Have a read and try to "travel" through the gastronomic memories of the people who were interviewed and, from these delicious conversations, understand the historical and cultural path that led to the formation of the city's gastronomic image, whether for tourists, its inhabitants or local entrepreneurs. The data was collected through bibliographical research, complemented by qualitative field research, which was analysed using the technique of discourse analysis, based on the oral history provided by our interviewees.
