El autor ha trabajado en hoteles de cuatro y cinco estrellas, restauración ferroviaria en trenes interurbanos europeos y suizos, restauración de cruceros en el norte de Europa, restaurantes de alta cocina y de comida informal, restauración comercial y social en Portugal y Luxemburgo. Comenzó su carrera profesional en 1976 en Lisboa, es formador en restauración desde 1980 y profesor universitario desde 1998. Temas de interés: Gastronomía, restaurantes, catering, gestión de alimentos y bebidas (F&B Management).

About the author

Assistenzprofessor an der Europäischen Universität seit 2015, in der Hotelfachlizenz, Lebensmittel- und Getränkemanagement UC. Außerdem war er von 2006 bis 2011 Lehrbeauftragter am Polytechnischen Institut von Leiria für Hotelmanagement und von 1998 bis 2006 am Höheren Institut für Erziehungswissenschaften für Tourismus, Gastgewerbe und Thermalismus.
