The book covers the methodologies used to assess the physico-chemical and microbiological aspects of Melipona scutellaris honeys subjected to artificial feeding. The book is divided into chapters that describe the entire process of assessing the quality of honey through physicochemical analyses such as pH, acidity, soluble solids, refractive index, humidity, electrical conductivity, ash and total dissolved solids, as well as microbiological parameters in order to identify the presence of bacteria of the Staphylococcus genus, enteric bacteria, fungi and total bacteria.

Zootechnician from UFPB/URI. She has experience in the areas of quality of animal products, behaviour and welfare, bioclimatology in beekeeping and meliponiculture. Master's in Animal Science from PPGCA/UFCG. With experience in bioclimatology in animal production. Currently studying for a PhD at PDIZ/UFPB, carrying out research into meta-analysis.
