Predictive microbiology focuses on indicating the possible variations that occur among populations of micro-organisms as a result of the environmental factors to which they are exposed. Thus, based on the observations already analysed, it is possible to predict the behaviour of micro-organisms in a given environment. In this sense, the use of this tool can be a strategy used for the prevention of microbiological hazards, allowing the adoption of effective corrective measures to be used in areas relevant to food quality and safety.
