Pectinase was one of the first enzyme to be employed commercially in various sectors dating back to 1930. Microbial pectinases account for 25% of all food enzyme sales worldwide. Pectinases are leading enzyme in commercial sector at present. It is proved that instead of using high yielding strains, the cost of production can be reduced by using ideal fermentation conditions and inexpensive raw materials as carbon source and substrate.
