Solar thermal system for manufacturing of paneer - A Tool for Energy Conservation

Paneer is an important heat and acid coagulated milk product which is used as a base material for the preparation of a large number of culinary dishes. Energy is a basic requirement for the various dairy processing operations. A solar thermal system assisted double pipe, four pass heat exchanger system was designed, fabricated and tested for energy conservation. The sensory and rheological properties of paneer prepared using this system was found at par with the control sample. This design having flexibility of admitting backup hot water as per the requirement and can be successfully used for the preparation of paneer using solar energy. The design feature also includes provision of CIP of the heat exchanger.
