Food control is an institution created by the state several centuries ago with the intention of protecting the consumer from deception and food-borne diseases. It is striking that such an important part of the law is not discussed today, specifically because of the importance it has for all of us. This analysis was carried out because, in recent years, in our country, there have been important advances in food matters that undoubtedly are accompanied by a development in food control agencies.It should be clarified that, although there are rules on food control in our country as, for example, the Argentine Food Code, it is often impossible to carry out a complete control because there is a bureaucratic apparatus that does not allow to effectively carry out the task of control. This is due to several basic issues, mainly the number of rules (decrees, resolutions, laws) that often interfere with each other, which generates conflicts that lead to an unsolvable end.
