Fruits and vegetables are being considered as great nutrition sources and generally consumed after peeled off and removing their seeds. Generally the removed peel and seeds are not eaten and they are considered as waste. This waste, is ultimately the part of fruits and vegetable and they may also possess the same nutrients in them. Present review work has been carried out to explore the hidden potential of fruit and vegetable waste. Commonly used 17 different fruits and vegetable wastes have been selected and have been focused for their phyotchemical potential, antioxidant activity and antimicrobial activity.

Dr. Urvi Gupta, eine begeisterte Botanikerin und leidenschaftliche Forscherin, arbeitet als Assistenzprofessorin am IITE, Gandhinagar, Indien.
