Sea food products having a great demand in both national & international market. Consumer demands for the novel sea food products. Hence, there is a need of value addition to the sea food products. Even this may help to rise the national income. In the present study an attempt has been made to produce a novel sea food product which is further helpful to the sea food processors. Puff pastry is one of the popular appetizer in several countries. So Ready to bake fish puffs were developed which can be stored in chilled conditions before baking.

Amita R. Jain has completed her post graduation in fish processing technology at College of Fisheries Ratnagiri (MS) India. She has developed many Ready To Cook Sea food stuffed products like Fish stuffed Rolls, Fish Stuffed Samosa (Indian stuffed pastry), Fish stuffed Spirals etc. Recently she is working as a Senior Research Fellow.
