L industrie de la distillerie se compose de deux parties la fabrication du liquide alcoolique et la séparation de l'alcool ou distillation.

La première est de beaucoup la plus importante. De la ma niere dentelle est exécutée dépend tout le succès l'alcool, en effet, sera plus ou moins bon, suivant la maniere dont la fermentation aura été conduite. Mais, pendant longtemps, cette partie de l'opération a été très négligée, abandonnée à la rou tine d'ouvriers ignorants; on expérimentait en aveugle les recettes plus ou moins insignifiantes enfantées par l'imagination d'un contre - maitre.

Quant à la distillation, cetait avant tout une question de chaudronnerie.
