Plutarque s'interroge, s'émerveille, devant ce qu'il appelle le courage, la raison ou le plaisir, qui permet à l'homme de tuer puis de manger des animaux. En somme, la question qu'il pose peut s'énoncer de la manière suivante : comment l'homme peut-il jouir de manger de la chair ? Cette question n'est plus religieuse, mais proprement morale. Elle ne concerne plus seulement un certain ordre du monde, un partage entre les animaux, les hommes et les dieux, mais un ordre de la moralité, lié à l'évolution des cultures et des mentalités.
