Sorption isotherms and drying kinetic of Rosmarinus Officinalis are experimentally investigated. Water sorption isotherms of rosemary leaves are studied at three temperatures: 30, 40 and 50 °C, using the standard static gravimetric method. The drying kinetics was studied for four different air temperatures (50, 60, 70 and 80 ° C) and two air flows drying (300 m 3/ h and 150 m 3/ h) for an ambient temperature in the range of 26-37 °C.

She was a Quality Manager in an agrifood company and currently a doctoral student in Biotechnologies and Food Technologies at the CadiAyyad University, Marrakesh, Morocco.
