Many essential oil constituents are volatile, poorly aqueous soluble and chemically unstable. Carrier systems including cyclodextrins, micelles, liposomes, nano- and micro-particles and supramolecular systems were emerged to allow their wide use in food and pharmaceuticals. It highlights their preparation techniques as well as their physico-chemical and biological characteristics.
