Aujourd'hui, nous assistons à la faillite du bonheur quantifié promis par la modernité et, avec lui, à un crash écologique assuré. Face à cette crise de la société de la croissance, il est nécessaire d'inventer une société de l'abondance frugale. La frugalité fait l'économie de toute consommation non nécessaire : elle implique une limitation volontaire de ses besoins, mais n'exclut ni la convivialité ni une certaine forme d'hédonisme. Cette réhabilitation de la joie de vivre passe par celle des saveurs. La gastronomie, comprise comme l'art de bien manger grâce à une cuisine saine et raffinée, sans être ni ascétique ni orgiaque, fait partie, sans s'y réduire, de cet art de vivre préconisé par la décroissance.
