Pasta Primavera With White Beans     8 oz whole-wheat pasta, cooked and drained 1 can (15 oz) white beans, drained and rinsed 1 cup frozen peas, defrosted 1/2 yellow bell pepper, diced (about 3/4 cup) 1/2 red bell pepper, diced (about 3/4 cup) 1/2 cup cubed mozzarella or grated Parmesan cheese (optional) 1/3 cup chopped fresh basil leaves 1/4 cup olive oil 1 1/2 tablespoons balsamic vinegar Salt and ground black pepper   *Makes 10 Cups, About 6-7 Meals.   DIRECTIONS In a large mixing bowl, combine the pasta, white beans, peas, yellow and red bell peppers, and cheese (if using) and toss until well mixed. Stir in the basil, olive oil, and balsamic vinegar. Season to taste with salt and pepper. Serve warm or cold, as a pasta salad.   SWITCH IT UP For a gluten-free version, use gluten-free pasta or substitute rice. For a dairy-free version, skip the cheese.
