Starch from a variety of food crops has been utilized in the food, pulp and textile industries. With an increase in population, there is scarcity of the food resources. There is a need to exploit the potential of starch from the wild crop relatives for the numerous industrial starch applications. There is also a need to assess the phenotypic diversity of these wild crop relatives in order to fully utilize them in plant breeding. This book therefore documents information on the distribution, phenotypic diversity and the starch profiles of the false banana (Ensete species) in Uganda. This information is especially useful for the ethno-botanists, plant breeders and biochemists.
